Ingredients 3 ripe bananas 1 pack of blueberries (fresh or frozen) ¾ cup caster sugar 1 cup self raising flour ½ cup vegetable oil 1 tsp baking powder 3 eggs Method
Pre-heat oven to 180℃.
Grease a cake tin with butter or oil.
Pour the dry ingredients into the mixing bowl and mix together.
Mash the banana in another bowl and whisk in the eggs.
Pour this mixture into the dry ingredients, add the oil and mix in. Add all the blueberries and mix together.
Pour mixture into cake tin.
Bake in the oven for 45 minutes.
To check if the cake is cooked, insert a skewer/knife into the middle of the cake. If it comes out clean, the cake is ready.
Chef's top tip: Keep a cupboard full of spices/herbs/seasonings so you can easily add flavour and excitement, google an ingredient if you are unsure what to do – loads of recipes and flavour combinations will come up, freeze things you don't need now, you can freeze pretty much anything, and wilting vegetables into a soup or stew or curry, and ripe fruit into a smoothie. A particular favourite of ours/the young people is to bake excess fruit or vegetables into a cake!
