Handful of sliced cooking chorizo
½ red pepper, cut into wide slices
2 spring onions, roughly chopped
Small handful of orzo pasta or another type of other pasta
Salt & pepper
Pan-fry chorizo in a splash of olive oil over medium heat.
After a few minutes, as the chorizo starts to colour, add the red peppers slices and fry for a further couple of minutes
Add the spring onion
When the onions are soft, season well with salt and pepper.
Add the orzo or past of your choosing.
Stir to combine and add the passata
Simmer about 15 minutes until the orzo is cooked
Add plenty of cracked black pepper, add more salt if needed, then serve
