Pan-fried halloumi in such a treat. It takes on a gorgeous texture and the pan-frying process gives you the perfect opportunity to add bags of flavour to this versatile cheese.
2 slices of halloumi cheese
1 ½ tsp korma curry powder
Handful of spinach
Splash of single cream
Salt and pepper
Pan-fry the halloumi slices in a splash of olive oil over medium heat with 1 teaspoon of the korma curry powder and some cracked powder.
Cook for a few minutes on each side and once it starts to brown, remove from the pan
Using the same pan, add some more olive oil if necessary, then add the spinach with the remaining curry powder and stir until it starts to wilt.
Add the cream and stir for 30 seconds to create a creamy, curry-infused sauce
Taste and season if required
Serve the fried halloumi on a bed of the creamy curried spinach.
